Yoghurt, Soyamilk, Apricot Dessert

METHOD

 
  1. Drain soaked apricots, blend it in a mixie till it gets crushed coarsely.
  2. Put it in a heavy pan, sprinkle half sugar, heat till the sugar melts.
  3. Simmer stirring gently, till excess moisture gets absorbed.
  4. Keep it aside to cool, refrigerate till required.
  5. Beat the curd and the remaining sugar in same mixie.
  6. Then transfer it to a mixing bowl.
  7. Melt china grass in 1/2 cup water, till it becomes transparent.
  8. Strain and pour slowly in the beaten curd, mixing simultaneously. | |When fully mixed in, add essence, soya milk, apricots.
  9. Beat it well with hand whisk, to lighten and fluff up.
  10. Transfer it to freezer to softly set and chill.
  11. Serve scooped into bowls, topped with nuts.
