METHOD
- Drain soaked apricots, blend it in a mixie till it gets crushed coarsely.
- Put it in a heavy pan, sprinkle half sugar, heat till the sugar melts.
- Simmer stirring gently, till excess moisture gets absorbed.
- Keep it aside to cool, refrigerate till required.
- Beat the curd and the remaining sugar in same mixie.
- Then transfer it to a mixing bowl.
- Melt china grass in 1/2 cup water, till it becomes transparent.
- Strain and pour slowly in the beaten curd, mixing simultaneously. | |When fully mixed in, add essence, soya milk, apricots.
- Beat it well with hand whisk, to lighten and fluff up.
- Transfer it to freezer to softly set and chill.
- Serve scooped into bowls, topped with nuts.
